Recipe for success: Vu Noodles’ survival story

Those who work in business can tell you that success requires hard work, adaptation, and some smiles from fate. Julie Vu Whitaker, founder and driving force behind Vu Noodles, can attest to all three.

In 2013, after 20 years as a social worker, Whitaker decided on a career shift. “[While] I still loved it, I was ready for a change,” she says.

From childhood, she enjoyed cooking and sharing foods from her Vietnamese heritage, and she credits her immigrant family (they arrived in Waynesboro when Whitaker was 8) with instilling a strong work ethic: “My family has always been in their own business.” She began selling Vu Noodles, her “to-go” take on traditional Vietnamese vegetable bowls, at The Farm corner grocery in Belmont. “It really opened my eyes,” she says. “People liked my food.”

Vu Noodles’ popularity led Whitaker to get her home kitchen commercially certified so she could supply vendors around town, from Whole Foods Market to Rebecca’s Natural Food and Martha Jefferson Hospital’s café. After three years working long hours—her bowls are prepared fresh every day—Whitaker says she needed some help. “I was thinking, ‘I can’t keep doing this alone.’” She jumped at the opportunity to take over The Spot on Second Street in partnership with Kathy Zentgraf of Greenie’s.

Demand soon meant the business had outgrown Whitaker’s home kitchen, so she struck a deal with Pearl Island Catering to rent the kitchen at the Jefferson School City Center and supply the café there. “Now I had a sit-down space, and could interact more with the customers, which I loved,” she recalls. But sharing the kitchen with Pearl Island’s growing business began to bind. By late 2019, Whitaker was considering the new Dairy Market, which would have meant taking on significant debt. “I’d always been able to fund my business myself,” she says.

Enter another opportunity: Early this year Whitaker got an offer to take over The Flat Creperie’s space—right off the Downtown Mall, with its own kitchen, and small enough for Whitaker to handle with help from her husband and two sons, now in high school.

In another smile from fate, in May the United Way of Greater Charlottesville and the city’s Minority Business Alliance announced the first grants under a new partnership to help support local minority- and women-owned small businesses. One of the $5,000 grants went to Vu Noodles, although Whitaker had to be convinced by a friend to even apply. “I always feel that someone else needs the money more,” she says.

The timing was perfect. The grant (and the pandemic shutdown) enabled Whitaker to renovate the kitchen and install a microphone for contactless ordering before opening in July.

Starting up at a new location while downtown foot traffic is just recovering is a challenge, but over the years Vu Noodles has developed a sizable and devoted following. Whitaker’s offerings now include pho and banh mi sandwiches as well as her noodle bowls, and are all completely vegan—except for one important holdout. “I had to keep the fish sauce,” she says with a smile. “It’s so much a part of our food tradition.”

Small Bites: June 3

Business not as usual

In recent weeks, many local restaurants that decided to take a pandemic pause have started to phase back into action, including well-loved spots like Al Carbon, Bizou, Brazos Tacos, Little Star, Luce, Tavola, and Tilman’s. These restaurants are reaching customers through online ordering with delivery, curbside pickup, or no-contact handoff of food and drinks. Some, like Citizen Burger Bar and Red Pump Kitchen, are also making use of available outdoor space to bring guests back on site, at a distance. The returns are a glimmer of hope for many after months of closure announcements—both temporary and permanent—due to coronavirus. Hello, Tonic

Speaking of Tilman’s, reopening the wine and gourmet food spot on the Downtown Mall isn’t the only thing that owners Derek Mansfield and Courtenay Tyler have been working on. The pair is opening a new restaurant, Tonic, in the space formerly occupied by Tin Whistle Irish Pub (which closed at the end of last year after a landlord dispute). Tonic promises build-your-own snack boards and small plates with items like pickled shrimp and marinated mushrooms, and a focus on healthy local fare. Keep an eye out for a summer opening.

Drink with a purpose: Dubbel 151

Spirit Lab Distilling and Champion Brewing partnered on a collaboration to support Charlottesville-area restaurant workers who were laid off due to the pandemic, and the results are good enough to drink. Released in May and produced from over 8,000 cans of beer, Dubbel 151 is made of Champion Brewing’s Brasserie Saison Dubbel and Saison beers distilled to 75.5 percent alcohol or 151 proof. Bottles can be purchased on the Spirit Lab Distilling website with curbside pickup and shipping throughout Virginia and Washington, D.C.

Coffee care

Snowing in Space Coffee Co. released a new whole-bean coffee blend, Frontline Fuel, aimed at caffeinating Sentara Martha Jefferson Hospital health care workers. For every bag of Frontline Fuel purchased at snowinginspace.com, the company will donate a bag to the hospital. The medium-roast blend is made of certified Fair Trade organic beans and is available for one-time and subscription purchases, as well as wholesale for retailers and offices.

  

Wine relief

Blenheim Vineyards recently released a limited-edition red wine blend called On The Line, with proceeds  going to Frontline Foods Charlottesville and World Central Kitchen, organizations that are providing meals to people in need. The label, which can also be seen on other merchandise including stickers and posters, is designed by vineyard owner Dave Matthews. And there’s more to come—a white blend is set to release later this summer.

Ripple effect: Local restaurants connect creatively to survive the virus’ impact

As restaurants nationwide are forced to limit service in response to the coronavirus epidemic, workers and owners face economic as well as emotional uncertainty. Our gem of a food town is no exception. 

By the time Charlottesville announced its first case of COVID-19 on March 16, restaurants all over town were shutting down or moving to take-out only. At the City Council meeting that evening, several restaurant owners asked council to temporarily delay collection of the meals tax that came due on March 20. Councilors denied the request, but penalties for late payment have been suspended through May 31. 

While the city searches for other ways to support businesses in the months ahead, Charlottesville community members have already responded, swooping in to help provide some financial assistance and morale boosters, with the hope of spurring others to do the same.

Kate Ellwood, former general manager at Citizen Burger Bar, launched the Charlottesville Restaurant Community Fund with a GoFundMe site to help raise money for workers who rely on tips to survive and low-wage hourly workers

“I have a cousin who is a restaurateur in Boston, and seeing restaurants in these big cities shutting down, I figured it was only a matter of time before it happened to our community,” she says. “I reached out to [Citizen owner] Andy McClure, and ran it past him and he liked the idea, so I ran with it. 

Ellwood set an initial goal of $10,000, and at press time the fund was well over $20,000. She plans to keep running it, and either continue to donate to other restaurant workers or offer money to other area organizations, such as the food bank. She’ll distribute funds to workers with crucial needs—those who have chronic illnesses or children who need emergency food, or people who could use help paying for their medication or housing. “Any bit of money will help right now in their situation,” she says. The grants will top out at $200 per person, and Ellwood reached out to restaurant owners to determine the recipients. “I’ve had owners and managers contact me to nominate staff who they think could most use it, so that’s been really helpful,” she says. 

Beyond the financial support, Ellwood is also helping workers navigate daunting tasks like filing for unemployment. And, with the help of her training from the Community Investment Collaborative, she’s connecting other local businesses and organizations to create a large network that can help. Her efforts have earned her some national press attention, with Eater, Food & Wine, Imbibe, and Cherry Bombe magazines all spreading the word online.

Restaurants have scrambled to redefine themselves quickly in order to survive, many offering take-out and delivery services. And almost all eateries have expressed that the purchase of gift certificates is a great way to help them immediately.

Lampo Neapolitan Pizzeria has carryout service through online ordering. The Local and Junction are offering online orders with a Ten for Ten menu of comfort food items costing $10 (all proceeds go to The Local’s staff and the community). Tavola (co-owned by C-VILLE’s Culture editor Tami Keaveny) has shifted to retail wine sales and delivery, which wine director Seth Maynard says, “allows me to make the world-class wines on our list more affordable.” Seeing it as an opportunity to be creative, Maynard is offering several different themes for curated, mixed cases, including: Italian antiques (from classic Italian wine regions); What your parents drank (recognizable varietals and blends like Bordeaux); Wine that your kids drink (modern “hipster” wines from lesser known regions); and a dealer’s choice matched to a customer’s flavor profile. 

Others have reluctantly shuttered their doors for now. Angelo Vangelopoulous, owner of The Ivy Inn, closed on March 15, and started a relief fund for his staff. “It became clear to me that people weren’t getting the message that social distancing is what we need right now, so I thought it best that The Ivy Inn family did its part to get the word out and show how important this is to our community and everyone worldwide,” he says. 

Ellwood, meanwhile, hopes to launch a nonprofit to support the restaurant community in a more sustained way. “Doing something like this makes other people want to help,” she says. “It has a ripple effect.”


Paying it forward

While our local restaurant community is struggling, it is also pitching in to help others. Kathryn Matthews, owner of Iron Paffles & Coffee (and who is herself recovering from a major car accident that left her unable to work until recently), is helping to organize essential donations to those in need through the community website supportcville.com. 

“Since the outbreak of COVID-19, businesses across Charlottesville have taken a hit, especially the restaurant industry,” says Matthews. “The result has been an abundance of surplus food from canceled catering orders and lower-than-usual sales, which I couldn’t bear to waste. When I heard of other restaurants in a similar situation, I rallied the restaurant community together to donate their leftovers to low-income families.”

She says SupportCville is also looking for donations from the public of kid-friendly non-perishables, including canned fruit, granola bars, cereal, rice, pasta, peanut butter, and juice boxes, as well as financial donations.

YOU Issue: Our favorite spots for a tasty meal or a good beer—with kids in tow

Charlottesville overflows with great spots for a grown-up night out. But you don’t have to give up your social life just because you have kids. Parents with small children simply face a different calculus: Is there something on the menu the kids will eat? And even more importantly, something to keep them occupied so you can actually relax and enjoy your meal?

We crowd-sourced this question and added our own favorites to give you a look at the best family-friendly places around town (because babysitters are expensive!).

Beer Run No kids’ menu per se, and yes, the beer is off-limits. But locals prize the Carlton Road spot’s relaxed vibe, and outdoor picnic tables mean the wee ones have a little room to roam while you’re waiting for the food. Plus, the nachos are some of the best in town and the breakfast tacos are fun for all ages.

Bodo’s One preschooler we know sticks with butter on plain whole wheat, while another has been known to order liverwurst and onion. Either way, low prices, kid-friendly options, and seat-yourself dining rooms make this Charlottesville favorite a no-brainer for kids.

Brazos Tacos Texas-style tacos, a sneaky-good chicken and tortilla soup, and chips with queso and guacamole are best enjoyed on a sunny day at picnic tables on the outdoor patio. Grown-ups can finish off their margaritas and Tecates while their younger relations explore the porch swings and book installation across the grass at this Ix Art Park spot. And if everyone behaves, there’s the promise of a Sweethaus cupcake around the corner.

Chew Chew Town A recent addition from the owners of the wildly popular Seminole Trail chicken joint Al Carbon. This railroad-themed offshoot features a super-cool train set overhead, while a separate countertop train delivers the food. There’s standard kids menu fare like mac and cheese for the picky eaters, while grown-ups can enjoy their favorites from the much beloved Al Carbon kitchen.

Firefly This lively restaurant/bar/arcade is perennially popular with families. Commenting on Facebook, C-VILLE reader (and Feast! owner and Local Food Hub board member) Kate Collier calls out Firefly’s abundant games—from foosball to Donkey Kong—and its local food, plus “a wood stove to keep you warm and toasty.” Chase your chicken tenders and tater tots with a Shirley Temple from the dedicated kids’ drink menu.

Fry’s Spring Station Every Tuesday at this historic former Jefferson Park Ave. service station is family night, when you can get either a $33 family dinner or a $3 kids’ meal. The place is a neighborhood fixture with a unique character, but young people may be most interested in the desserts that come bundled into the $6.50 kids’ meals. Try “The Wookie,” a warm cookie with chocolate sauce and whipped cream.

Kardinal Hall Open-air tables with flexible seating, plus bocce and ping pong, add up to a place where the whole family can stretch out and relax. The kids’ menu has the usual grilled cheese/chicken nuggets/hot dogs, plus organic carrot sticks and ranch dressing for the pint-sized vegetarian in your life.

The Nook This Downtown Mall stalwart won’t be setting any speedy-service records, but the staff is warm with kids and, aside from the basic children’s menu, it has what must be the longest dedicated mac-and-cheese menu in town. Diner staples like the BLT on toast are a step up in quality from standard greasy-spoon fare, and the outdoor patio is a short hop from the Virginia Discovery Museum carousel and the free speech chalkboard while you’re waiting for your meals to arrive.

The Pub by Wegmans The Fifth Street Station grocer with a cult-like following has a restaurant where kids eat free on Tuesdays. Reader Betsy Hernandez praises its casual seating without a rush to finish and its quick service—and a kids’ corner with cartoons on the TV.

Three Notch’d, Champion, and Random Row Who says breweries are just for beer drinkers? All three of these local craft taprooms have dedicated fans in the parent scene. Champion’s comfort-food-oriented menu has pretzels and cheese dip and a hella-good hot dog, while Three Notch’d, with its kid-zone play area, serves a $7 kids’ meal that includes an entrée, a side, and a scoop of Virginia-made Homestead Creamery ice cream. Random Row serves pizzas from Mona Lisa Pasta with juice boxes and milk for the kids to sip, plus board games and a chalkboard coloring wall.

Wild Wing Café Young’uns who like to watch sports will thrill to the battery of TV sets showing live athletics, while parents will be pleased to know items from the extensive “Wild Child” menu are just $1 apiece for kids 10 and under all day on Mondays. Leave the Little League team home, though: There’s a limit of two dollar-kids’-meals per table.
